December Birthdays

By Cindy Goff

Our youngest son, Josh has a December birthday.  My goal every holiday season is to get the house all festive and ready for Christmas before his birthday on December 16th.  I’ve done pretty well in the last 22 years, but this year I have been procrastinating big time!   We are still putting finishing touches on the house & yard, baking, shopping etc. and it’s only 2 days before Christmas Eve when we will have a houseful of people!    At this rate it maybe it will all be done by my birthday…4 days after Xmas!  Yi, yi, yi!

I tried something different this year and make Josh’s favorite Angel Food Cake in Longaberger Small Loaf Pans (3) and 1 Small Pie Plate.  Worked great in the loaf pans and I should have used 4 instead of using the pie plate.
You could easily freeze the smaller cakes for later too.  Fun to experiment.
I took them out of the pans and frosted them. Yumo!

The batter really expands so I could have used a couple more loaf dishes.
