Berry Pie

Oooh so good!  I made this pie for Weaving Friendships last month in our Pink Pie Plate.  It’s so easy and yummy on a hot summer day.  Probably wouldn’t matter what kind of berry you use but I lucked into a whole bunch of  fresh blackberries from Carla and they worked perfectly.   Thanks Carla!  I have since made the pie several more times and promised to share the recipe.   This month I think I will make something in the Fluted Cake Pan that just happens to be on special on Tuesday!

BERRY BERRY COOL PIE by Eagle Brand/Keebler

Servings: Makes one pie *Prep Time: 15 minutes*Freeze Time 5 hours or make a day ahead

  • 1 (14 oz) can Eagle Brand Sweetened Condensed Milk
  • 1/2 cup Lemon Juice
  • 1 1/2 to 2 cups assorted fresh berries (raspberries, blueberries, or blackberries)
  • 1 (8 oz) container frozen non-dairy whipped topping, thawed
  • 1 (6 oz) Keebler Ready Pie Crust

Instructions

In a large bowl, mix together sweetened condensed milk and lemon juice; combine well.  Mix in berries.  Fold in whipped topping.  Spoon mixture into crust.  Freeze 5 hours or until set.  Let stand 30 to 40 minutes before serving.  Garnish as desired.  Most likely there won’t be any leftovers but if there are, store ’em covered in freezer.  Enjoy!
